Very good value for a very well made product
Bought this and the Zwilling paring knives at the same time. This is a larger and rougher handle, and is heavier and more balanced to the handle. Either one will last a lifetime, and do the job. The Zwilling is two or three times the price of this, but they are of comparable quality considered as knives. The difference is a matter of taste and perhaps size of hands. I find this one's handle a bit too thick, but others may differ, and that and the extra weight are about the only substantial differences. They are both quality items, well made and finished. I would be guided by what you know fits better in the hand. If your budget is limited, don't think twice, get this one. It will do the job, last forever, and you will probably get used to the feel and weight of it very rapidly. An extravagant present with a brand name to match, the Zwilling fits the bill a bit better. But as said above, this is largely about taste. I also bought the Zwilling 16cm chefs knife, and like it very much - see separate review. I recently bought the Mercer similar 16cm chef knife for a different household. People might like to know how they compare. This size is not what professional cooks prefer, but for someone cooking in a home environment for a small number of people, it will be much better than the 20cm versions. Also the handles of these are much better than the more elegant looking two piece riveted handles, they fit the hand better and are pretty much totally non-slip. The Mercer is about half the price of the Zwilling. It has a similar handle. The blade is slightly deeper, and its definitely heavier. It apparently has a full tang, which the Zwilling may not. In sharpness and ease of sharpening they are probably about the same. Maybe the Zwilling is a bit harder and so takes a little more work to restore the edge. I slightly prefer the Mercer in this respect, but I slightly also prefer the Zwilling in the hand, to use. All in all I think, as with the paring knives, whichever you get you will get used to in a short time and not really notice the difference. The thing I would say about the paring knives is that the Mercer is a little bit shorter, and that makes it a bit less nice to use in some applications, so you end up using the chef knife more. But that's a minor quibble. Whichever pair you get (paring and chef) I think they will last a lifetime, so be guided by how important the pennies are. I continue to have a slight preference for the Zwilling, but if money is tight, buy the Mercers. They will last a lifetime and be a pleasure to use. I bought the Zwillings in the Christmas sales, well discounted, so the difference was not so great as it is now. Without the dscount I would have bought the Mercers and been very happy with them.

SHARP
Wow. Fed up with having blunt knives and decided to spend more on a hopefully decent one. Not disappointed, it is SHARP, can cut thin slices of tomatoes and lemon. Really nice feel and weight. Going to buy a smaller one from the same range. Why have I waited so long!?

Handy 6” Chef’s knife, well balanced, good edge.
The Mercer 6” Chef’s knife has a good edge, cuts well without bias, and feels balanced and comfortable in the hand. The absence of rivets in the handle is a great plus point for me. Hand wash it only, never ever in a dishwasher. The steel is good quality and if the claimed alloy has been used then it will keep its edge much longer than a more old fashioned blade. Always use a proper whetstone or sharpening steel to dress the blade. Out of the box it cut though a tomato under its own weight, one of the ultimate tests for how sharp a blade is. Trimming a steak was easy, fat and gristle were banished in a twinkling. I like this one.

This is a great knife, paper sharp out of the box, at a remarkable price.
A perfect weight balance in my hand, with a nice stiff blade, and of course paper sharp out of the box. I will give updates as I use the knife for its intended purpose. But at the moment all I can say is :- I can highly recommend this knife to anyone wanting a butchers quality boning knife. Update:- Having now used this knife for a couple of months, I can state unequivocally, it is better than any of the professional Victorinox boning knives I used during my 12 year career as a butcher.

I am very impressed with the Mercer Culinary Genesis 8-Inch Forged Chef's Knife. It is, as a type, very similar to the Wüsthof Classic 8" Chef's Knife and the Henckels International Classic 8" Chef's Knife, both of which cost more, much more in the case of the Wüsthof. The Mercer Culinary Genesis Chef's Knife is a delightful kitchen tool, well balanced, made in Taiwan from high-carbon, German cutlery steel. This seems to be the method these days with Chinese and Asian knives: made in China or Taiwan to cut costs from imported high end German steel. The knife is definitely sharp right out of the box. Although I don't know for sure I would guess that it uses a standard 20 degree bevel rather than the 15 degree Japanese style that has become fashionable for super sharpness. For home cooking it should hold its edge for quite some time between stropping or sharpening. I especially like the feel and grip of the Santoprene handle. Of course synthetic materials like Santoprene always raise a small worry about long term wear and durability. But I have had Henckels knives with wooden handles that splintered after a few years and also Chinese knives with ABS handles that shattered or separated. So it's mostly a matter of quality and the Mercer impresses that no corners were cut in its manufacture. The bolster on the Mercer Culinary Genesis is, for me, especially well proportioned and makes it easy to grip the knife properly. The knife has a full tang that runs the length of the handle, something that many cut rate but otherwise good looking Chinese knives do not have. Be especially careful of such Chinese made knives that have ABS handles with faux rivets and no visible tang on the top or bottom. Mercer Culinary is not a brand well known to most consumers. Mercer knives are sold mostly to culinary professionals and food service businesses through restaurant stores and other commercial outlets. But in the industry Mercer Culinary knives are one of the go to brands for dependable high quality long wearing knives to be used in daily food service and food industry work that in one day probably does more work than the average home cook would do in a year. The Mercer Culinary Genesis 8-Inch Forged Chef's Knife can typically be had for about $30.00-45.00 whereas the Wüsthof Classic 8" usually goes for about $130-155.00. The Mercer Culinary Genesis 8-Inch Forged Chef's Knife is a solid, dependable, sharp high quality chef's tool at a very affordable price. RECOMMENDED.

I'm a bit of a knife snob. this knife if the real deal. feels good in the hand. It's well balanced and it's really sharp. I"'ve only used it a few times, las was to cut and bone chicken legs and thighs. This knife made it so easy... I have to admit that I was a little skeptical when this and the 3" paring knife arrived. I was very unimpressed with the packaging, it looked like something you buy at the grocery store. I figured I'd give them a try. I'm really glad I bought them. I have to get rid of my knife block and the knives in it are not very good. The brand is very good, but the quality of the knives was not impressive. I'll be checking out other sizes and styles of the Mercer brand. A word of caution, you could cut yourself very easily if you're not experienced in the kitchen. It's THAT sharp.

Initial review, Just received the knife. Came sharp right out of the package. Sliced easily right through paper. Feels good in the hand. Looks great. First good Knife I've ever purchased. A few smudges on the knife, nothing bad but i do wonder why they're there. i was looking for a good knife that wasn't $100 or more. I'll update the review after actually using it. Update: Best knife i've ever used keeping in mind i've never spent more than 30$ on a knife before. Primary use is carving meat, turkey, brisket, roast etc.

I didn’t know this knife would make me a master chef! Thinking about applying for Hells Kitchen now because I’m so great! Ok not really, but this is the best knife I’ve ever owned and a really good price. Couldn’t be happier with it! Just be careful because it’s also the sharpest knife I’ve ever owned.
