Delightful, especially if you have a friend who owns a slicing machine :-)
I had this on my to buy list for quite a while. I finally bought it in May '22. There happened to be a coupon offer on it at the time. I lived in Italy for a while, and love San Danieli prosciutto, and many other Italian pork products. I've also lived in Germany, and am also a big fan of closely related German hams, so I had a very good idea of what I was going to be getting. The product arrived quickly and in perfect shape. At the time of purchase, the hams were advertised as being 5 lbs on average. The one I got was 5.7 lbs, which made it an even better buy. Since it is smoked and shelf stable, I stashed it my refrigerator, and did not actually start enjoying it until August. The flavor is excellent. I have an extensive set of knives, and so for me slicing it is not a major issue. However, getting large thin slices is a challenge, and I think this product is even more enjoyable when you can in fact slice it very thinly. Perhaps I will get better at it the more I practice. That is a happy thought. I have rarely wished that I had a slicing machine, but it would be much easier to generate consistently thin slices if I did own one. If I knew someone who worked in a deli I would bribe them to slice it for me. :-) I do really enjoy the flavor and the texture. It takes me back to the Bavarian Alps where local shops sell the German version of this, a product that I greatly enjoy. I am working my way through it. It is very flavorful, and a small amount goes a long way. As others have suggested, a thin slice atop warm bread, toasted or grilled, is a delight. I have also julienned some of the thicker slices and added them to plain cooked pasta, and it adds a great deal of flavor. If you bake pizzas at home, topping them with thinly sliced or julienned Speck after they come out of the oven is an interesting alternative to bacon, sausage, or ham. The idea is to merely warm the Speck and avoid cooking it. I'm pondering the addition of diced Speck to pea, lentil, and bean soups just before serving, or offering a dish of the Speck so that friends can add it or choose not to. Baked potatoes with diced pieces of Speck? The more you think about it, the more ways of using this product come to mind. I'm enjoying the product, and highly recommend it. When I am finished with it, I will most certainly be happy to buy this product again.

Very tasty, great value
This is really tasty Speck, just as I know it from Germany. The smell alone is heavenly. It's a big chunk, I cut mine into 3 pieces and vacsealed/froze two, we're already done with one part, will be slicing some of part two today. It really helps to have access to a meat slicer, but a very sharp knife and some skills will also get you very thin slices. I like my Speck so thin that you can look through it, easy task with a slicing machine, a budget one will do just fine for years. This Speck with some very good German style bread and good butter is just wonderful, I will certainly buy this again. Pay attention to the delivery date, it does get shipped in an insulated box with icepack but that had melted by the time it got to me. Everything was still cool, and it's no problem, since this is shelf stable w/o cooling, but it's best to not have it sit in a hot truck or warehouse on a hot summer weekend. This is a big piece of Speck, so also ideal to buy together with friends and family and divide after delivery. I'll be checking out what other tasty things this vendor offers.

If you are looking for german speck, don't buy it.
The meat of the ham is dry and hard. Has lots of fat and when you remove the skin, it's 1.5lbs less. I have a comercial slicer to get paperthin slices. The taste is terrible. Not even close to german speck. Should have red the reviews. Waste of money and time to slice it.

Great taste but the weight is not 6 lbs it is 5 lbs +/- (updated)
Excellent taste, just what I expected. I grew up in Europe and always enjoyed this type of smoked meat. I initially submitted the reviews below because of the wrong weight. That is still correct. I have reported this to Amazon and assume this is some mistake most likely outside of the sellers responsibility. The weight is 5 lbs +/- not 6 as stated on the website. I have not tried the meat yet. This is only about pricing. This is advertised as approximately 6 lbs for $88.95, what I received was 4.6 lbs for $88.95. That is about 30% more expensive than advertised. 4.6 lbs is NOT approximately 6lbs. If there is such a great variance in weight then I expect to be charge on a per pound basis and not for the full 6 lbs. Update: Adding to my disappointment, he same Speck is sold on Amazon with the correct description for $10 less. DO NOT BUY FROM THIS SOURCE! Buy from the correctly advertised source -Alma Gourmet Store.

Good Speck
I am Italian, living in US since 2000. I come from the north and always loved Speck, which my father would bring from Trentino-Alto Adige, where he would also go buy literally a truckload of apples for us. I have had lots of Specks, I know what it is, I have been multiple times in the region of production. There are of course there a variety of Specks of different quality, but all of them are really good. This is a good speck, decently priced (consider however that I've seen its price fluctuate in the window 45-70$). Ignore reviews saying that it is too much skin and fat. This item comes in fact as it should come. Fat is an integral part of Speck and Prosciutto, and should be sliced and eaten. It is important to slice very very thin, and let slices reach room temperature before eating it. Then the fat melts in your mouth and better conveys the flavor of the muscular part of the meat. Consider that some of the most sought after delis in Italy are 100% fat (e.g. Lardo di Colonnata) and they are eaten thin sliced at room temperature, on a slice of warm bread.
